2013 Estate Reserve Chardonnay
This 2013 Estate Reserve Chardonnay was fermented in temperature controlled stainless steel, then split into two lots using two different yeasts. The wine was aged for 14 months in a combination of neutral and 20% new French and European Oak. They utilized “Batonage”, a French technique of stirring the wine while on its lees (residual yeast and deposits), which allowed for a French inspired rich and creamy mouthfeel. The wine was then lightly filtered before bottling.

Made with 100% sheep’s milk, Little Lamb is a semi-hard cheese that as it ages, develops a caramel sweetness. Much like a gouda, the Little Lamb cheese is smooth and melts in your mouth.

This salami’s fresh flavor comes from juniper berries and Chianti wine from Italy. It has a lighter taste than other salamis, which is perfect for Chardonnay. Salami Cacciatore translates into “hunter’s salami.” It got this name because it is formed into small pieces about six or seven inches long, making them a simple and portable snack easily carried in a hunter’s shoulder bag.
