2011 Signature Reserve Meritage - Red Wine Blend

Meritage is a name for red and white Bordeaux-style wines (without infringing on the Bordeaux region's legally protected designation). This 2011 Signature Reserve Meritage was aged in both French and American oak barrels and is beautifully blended with 60% Merlot, 14% Cabernet Sauvignon, 14% Malbec and 12% Petit Verdot. It is very approachable with its nice fruit aromas, rich mid-palate and well balanced acidity. Bring this wine to your holiday dinner for the most enjoyment -- it is a ripe, fruity and low-medium tannin wine that pairs perfectly with turkey, cranberry sauce and many other holiday accompaniments.
One Year Aged Cheddar

Shelburne Farms cheddar is made in the English Farmhouse tradition, adapting a centuries-old practice to their unique terroir. Not only does Shelburne Farms craft their cheddar by hand (foregoing industrial processes), but they are Vermont's first non-GMO cheesemaker and one of the first farmstead producers of GMO-free cheese in the nation. After one year of aging their cheddar, the cheese develops a rich texture and grassy, medium-sharp flavor. It admirably pairs with apples, honey, cured meat and good company.

Finocchiona is undoubtedly one of the most loved among Tuscan pork products, which originated during the Renaissance (14th-16th century). Its name is derived from "finnocchio", or fennel, which abundantly grew along the Tuscan countryside and was used as an alternative to black pepper, which was very expensive at the time. Alle-Pia crafts their finocchiona using traditional Chianti wine from Italy, crushed fennel seeds and black pepper.
