This 2011 Duet from Roudon Smith Winery is a beautiful blend of Cabernet Sauvignon, Merlot and Cabernet Franc. The trio of grapes were co-fermented, then aged for 19 months in primarily neutral oak. The nose opens with notes of green sage and dried red chilies, which are followed on the palate with flavors of red currants and cranberry. The wine is bright and ripe and persistently balanced with excellent tannin.
We’ve complimented this wine with a Peppercorn Garlic cheese from Plymouth Artisan Cheese. The cheese is inspired by the flair and finesse of the French kitchen, with its proud and vivacious character and the savory elements of onion, garlic, red peppers and green peppercorns. These elements coalesce to enhance the earthy and spice layers found within the wine.
The flavorful Barolo salami from Alle-Pia Fine Cured Meats features Barolo wine from Italy along with fresh spices. This traditional artisan salami is known in Italy as Salame al Barolo, a meat delicacy that comes from Piemonte in Northern Italy, the birthplace of Barolo wine and the Alle-Pia family. The vivid spices further compliment the pairing, while its richness softens the medium tannin in the wine.
