The wild birch radiates an ethereal beauty that symbolizes promise, hope, and new beginnings—our 2016 Wild Birch Chardonnay blazes a trail into the new year with notes of soft peaches, simple minerality, and a bright finish of grapefruit and green apple.
This Chardonnay is perfectly complimented by Plymouth Artisan Cheese East Meadow, which was aged 60 days, then cut and waxed by hand. It is buttery and creamy with slightly sweet notes, which contrasts its bright acidity while adding a rounded mouthfeel.
Finocchiona is undoubtedly one of the most loved among Tuscan pork products, which originated during the Renaissance (14th-16th century). Its name is derived from "finnocchio", or fennel, which abundantly grew along the Tuscan countryside and was used as an alternative to black pepper, which was very expensive at the time. This particular finocchiona from Alle-Pia Fine Cured Meats uses traditional Chianti wine from Italy, crushed fennel seeds and black pepper, which adds another contrasting (yet compatible) layer with its mild spice.
