This gorgeous 2012 Chardonnay from Roudon Smith Winery is styled to compliment the pure minerality of the Santa Cruz Mountains. On the nose, it opens with citrus blossoms that are accompanied by notes of white peach and biscotti. These are swiftly followed on the palate with flavors of Eureka lemon, grapefruit and peach that harmonize into a finish of coconut and marshmallow.
We’ve complimented this wine with a Sage & Herb cheese from Plymouth Artisan Cheese. The aromatic sage, thyme, rosemary, lavendar and oregano build upon the beautiful citrus notes of the wine, without stealing the show.
Finocchiona is undoubtedly one of the most loved among Tuscan pork products, which originated during the Renaissance (14th-16th century). Its name is derived from "finnocchio", or fennel, which abundantly grew along the Tuscan countryside and was used as an alternative to black pepper, which was very expensive at the time. This particular finocchiona from Alle-Pia Fine Cured Meats uses traditional Chianti wine from Italy, crushed fennel seeds and black pepper, which accentuate the Chardonnay’s toasty nuances of oak.
