This 2013 Reserve Chardonnay from Maroon Wines was harvested from a small ranch in the Rutherford AVA of Napa Valley. The Chardonnay was whole cluster pressed, then cold-fermented in French Oak. The palate is complex with buttery nuances of oak followed by flavors of citrus and melon. The structure is balanced with a subtle acidity, which maintains an elegant brightness from start to finish.
This Chardonnay is perfectly complimented by Plymouth Artisan Cheese East Meadow, which was aged 60 days, then cut and waxed by hand. It is buttery and creamy with slightly sweet notes, which matches with the buttery Chardonnay while also contrasting its light acidity.
Finocchiona is undoubtedly one of the most loved among Tuscan pork products, which originated during the Renaissance (14th-16th century). Its name is derived from "finnocchio", or fennel, which abundantly grew along the Tuscan countryside and was used as an alternative to black pepper, which was very expensive at the time. This particular finocchiona from Alle-Pia Fine Cured Meats uses traditional Chianti wine from Italy, crushed fennel seeds and black pepper, which accentuate the Chardonnay’s oak nuances.
