In the spirit of Valentine’s Day, we’ve decided to feature Center of Effort’s aromatically pure ‘Effort’ Pinot Noir, which sings beautiful notes of ripe raspberry and spiced orange. You’ll find it simultaneously rich and racy in the mouth, with cardamom pod, ripe plum, and earthy aromas of dark loam and dried fig. Complex and long, it will evolve in your glass over the course of an evening.

We recently discovered Guggisberg Cheese and were intrigued with their “#1 cheese in America”, which has received a number of awards and accolades. Once we tasted it, we immediately knew that it was the perfect compliment to Center of Effort’s Pinot Noir. It has a unique blend of mild, slightly nutty flavors that compliment, but don’t overpower, the ‘Effort’ Pinot.

Finocchiona is undoubtedly one of the most loved among Tuscan pork products, which originated during the Renaissance (14th-16th century). Its name is derived from "finnocchio", or fennel, which abundantly grew along the Tuscan countryside and was used as an alternative to black pepper, which was very expensive at the time. This particular finocchiona from Alle-Pia uses traditional Chianti wine from Italy, crushed fennel seeds and black pepper, which accentuate the Pinot’s spice notes and round out the medium tannin.
